Apple Cinnamon Muffins

Makes 12 muffins

  • 3 large green apples, diced small

  • 3 tablespoons water

  • 9 eggs, divided

  • 3 tablespoons canned coconut milk (I recommend Native Forest brand)

  • 1 ½ coconut oil, melted

  • 1 teaspoon cinnamon

  • 1 teaspoon powdered stevia (I recommend Stevita Supreme)

  • 2 tablespoons coconut flour

  • ½ teaspoon baking soda

  • ¼ teaspoon sea salt

Instructions

  1. Preheat oven to 350 degrees.

  2. Oil a muffin pan with coconut oil or prepare with liners.

  3. Heat a large skillet on medium high heat.

  4. Add apples and water, and cover.

  5. Cook apples until softened. Set aside.

  6. In a medium-sized bowl, whisk eggs.

  7. Add remaining ingredients and mix well.

  8. Add apples and combine.

  9. Divide batter between muffin cups.

  10. Bake for 40 minutes or until muffins are firm.
