Basic Almond Milk

Makes ~ 6 cups

  • 2 cups raw almonds

  • 12 cups filtered water, divided

  • 1 tablespoon pure vanilla extract (or pure almond extract)

  • pinch sea salt

  • ½ teaspoon powdered stevia, or 7 to 10 drops of liquid stevia (optional)

Instructions

  1. Soak almonds in at least 4 cups of water for 12 hours

  2. Drain water and rinse almonds well

  3. Place almonds in a blender with 8 cups of filtered water

  4. Blend on high for 2 to 3 minutes

  5. Line a strainer with cheesecloth and place the strainer over a large, glass measuring bowl

  6. Slowly pour the blended almond mixture into the cheesecloth, stirring with a spoon to help separate the liquid from the almond meal

  7. When the last bit of liquid is poured into the cheesecloth, squeeze the cheesecloth to remove any excess liquid (reserve the almond meal for future recipes)

  8. Pour the strained liquid back into the blender

  9. Add the vanilla, sea salt, and stevia (optional) and blend for 30 seconds.

  10. Pour into a glass container and refrigerate for up to 7 days.
