Coconut Pancakes

Makes 8 small pancakes

  • 4 tablespoons coconut oil

  • ½ cup coconut flour

  • ½ teaspoon baking soda

  • 1 teaspoon cinnamon

  • 4 tablespoons almond butter

  • 4 eggs

  • 1 teaspoon powdered stevia

  • ½ cup almond or coconut milk

  • ¼ cup ground flaxseed (optional)

  • 2 cups frozen berries

  • 1 tablespoon water

Instructions

  1. Heat 2 tablespoons of coconut oil in a large skillet on medium heat

  2. Mix all ingredients until well blended

  3. Pour batter onto hot skillet, cooking until bubbles appear on the top of the pancakes

  4. Flip pancakes and cook on the other side

  5. Add more coconut oil to the skillet, as needed, for remaining pancakes

  6. In a small saucepan, heat berries and water

  7. Lightly mash the berries a few times, leaving some whole

  8. Serve pancakes with berries poured on top
