Easy Egg Muffins

Makes 12 muffins

  • 1 tablespoon coconut oil

  • 12 eggs

  • ½ pound sausage, bacon, or leftover meat, cooked and diced

  • 2 cups veggies, diced (any combination)

  • ¼ teaspoon sea salt

  • 1/8 teaspoon black pepper

  • 3 tablespoons water

Instructions

  1. Preheat oven to 350 degrees

  2. Oil each muffin cup with coconut oil or line with paper

  3. Whisk eggs in a medium bowl.

  4. Add remaining ingredients and mix well.

  5. Divide batter between muffin cups.

  6. Bake for 20 minutes or until middle is firm.

Note: These muffins freeze and reheat very well for a quick breakfast or snack. Additional seasonings can be added for variety and flavor.
