Paleo Hobo Dinner

Makes 4 servings

  • 1 pound grass-fed beef

  • 1 teaspoon chili powder or chipotle powder

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • ½ teaspoon salt

  • ½ teaspoon oregano

  • ½ teaspoon basil

  • 1 tablespoon coconut oil

  • 1 onion, roughly chopped

  • 8 carrots, roughly chopped

  • 1 head cauliflower, steamed and roughly chopped

  • 1 (12 ounce) package kelp noodles (optional)

Instructions

  1. Brown the beef in a medium skillet, on medium heat

  2. Add all seasonings and ¼ cup water, if meat is dry

  3. Turn off heat and set meat aside

  4. In a large skillet, sauté carrot and onion in coconut oil, on medium heat

  5. On a plate, layer cauliflower, kelp noodles, carrot/onion mixture and beef.

Note: Hobos can be precooked and preassembled in aluminum foil, and placed on a grill or campfire to reheat.
