Paleo Pumpkin Pancakes

Makes 12-15 pancakes

  • 8 eggs

  • 1 cup canned pure pumpkin puree

  • 2 teaspoons powdered stevia (I recommend Stevita Supreme)

  • 2 teaspoons pure vanilla extract

  • 2 teaspoon cinnamon

  • 1 teaspoon nutmeg

  • 1 teaspoon ginger

  • 1 ½ teaspoon baking soda

  • ½ teaspoon sea salt

  • 4 tablespoons coconut flour

  • 4-5 tablespoons coconut oil

Instructions

  1. Whisk eggs in a medium bowl.

  2. Add remaining ingredients and mix well.

  3. Heat a large skillet on medium heat.

  4. Add 2 tablespoons of coconut oil and spoon batter into skillet.

  5. Flip each pancake when bubbles appear on the surface.

  6. Add more coconut oil, as needed.
