Makes 8-10 servings
1 whole chicken
2-3 tablespoons coconut oil
1 teaspoon onion powder
1 teaspoon garlic powder
sea salt
Instructions
Preheat oven to 375 degrees.
Remove giblets and rinse chicken for several minutes.
Place chicken breast side down in a glass baking dish.
Make 4 (1”) slits in the skin on top of the chicken.
Place a pat of coconut oil inside each slit.
Sprinkle seasonings over the entire chicken.
Bake for 1 hour or until chicken reaches 180 degrees, using a meat thermometer.
Remove meat, keeping any extra for additional chicken dishes.
Place the carcass, skin, fat, joints and all oil that collected in the glass dish in a slow cooker for preparing bone broth. (See instructions HERE)
