Roasted Chicken

Makes 8-10 servings

  • 1 whole chicken

  • 2-3 tablespoons coconut oil

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • sea salt

Instructions

  1. Preheat oven to 375 degrees.

  2. Remove giblets and rinse chicken for several minutes.

  3. Place chicken breast side down in a glass baking dish.

  4. Make 4 (1”) slits in the skin on top of the chicken.

  5. Place a pat of coconut oil inside each slit.

  6. Sprinkle seasonings over the entire chicken.

  7. Bake for 1 hour or until chicken reaches 180 degrees, using a meat thermometer.

  8. Remove meat, keeping any extra for additional chicken dishes.

  9. Place the carcass, skin, fat, joints and all oil that collected in the glass dish in a slow cooker for preparing bone broth. (See instructions HERE)
