Spicy Chicken Soup (Slow Cooker)

Makes 12 servings

  • 2 tablespoons coconut oil

  • 1 onion, diced

  • 5 cloves garlic, minced

  • 1 green bell pepper, diced

  • 2 quarts bone broth

  • 6 cups chicken, cooked and cubed or shredded

  • 1 (16oz) jar sugar-free salsa

  • 3 (14.5oz) cans diced tomatoes

  • 1 (14.5oz) can tomato sauce

  • 2 (15.5oz) cans kidney beans or sugar-free chili beans

  • 2 tablespoons chili powder

  • 2 tablespoons dried parsley

  • 1 tablespoon onion powder

  • 1 teaspoon garlic powder

  • 1 teaspoon black pepper

  • ½ teaspoon sea salt

Instructions

  1. Heat coconut oil in a medium skillet.

  2. Lightly sauté onion, garlic, and green pepper. Place in slow cooker.

  3. Add all remaining ingredients to slow cooker.

  4. Cook for 4 - 6 hours.
