Makes 4 servings
1 head broccoli, roughly chopped
½ cup red onion, diced
½ cup sunflower seeds
1 cup green apple, diced
1 green bell pepper, diced
¾ cup mayonnaise
1 tablespoon lemon juice
2 tablespoons raw apple cider vinegar
1 teaspoon powdered stevia
1 tablespoon curry powder
Instructions
In a large bowl, combine broccoli, onion, seeds, apple, and green pepper.
In a small bowl, whisk remaining ingredients to make a dressing.
Combine salad and dressing.
Chill for at least 2 hours or overnight.
