Sweet Curried Broccoli Salad

Makes 4 servings

  • 1 head broccoli, roughly chopped

  • ½ cup red onion, diced

  • ½ cup sunflower seeds

  • 1 cup green apple, diced

  • 1 green bell pepper, diced

  • ¾ cup mayonnaise

  • 1 tablespoon lemon juice

  • 2 tablespoons raw apple cider vinegar

  • 1 teaspoon powdered stevia

  • 1 tablespoon curry powder

Instructions

  1. In a large bowl, combine broccoli, onion, seeds, apple, and green pepper.

  2. In a small bowl, whisk remaining ingredients to make a dressing.

  3. Combine salad and dressing.

  4. Chill for at least 2 hours or overnight.
