Makes 4 servings
½ head of cabbage, shredded
1 red pepper, diced
1 green apple, diced
1 (15.5 ounce) can full fat coconut milk
juice of ½ lemon, squeezed
20 drops of clear stevia
½ teaspoon nutmeg
½ teaspoon cinnamon
½ teaspoon salt
½ cup of fresh fennel tops
Instructions
Combine cabbage, red pepper, and green apple in a large bowl
Place remaining ingredients in a blender and mix well
Pour dressing over cabbage and toss.
