Makes 4 servings
½ head green cabbage, shredded
¼ head purple cabbage, shredded
2 stalk celery, diced
1 cup berries
1-2 kiwi, sliced
1 cup sunflower or pumpkin seeds
1 avocado
1 cup canned full fat coconut milk
2 tablespoons coconut butter
¼ cup preservative free lime juice
1 teaspoon vanilla
½ teaspoon powdered stevia, or more to taste
1 tablespoon lemon zest
Instructions
Combine Cabbage, celery, berries, kiwi, and seeds in a large bowl
Mix all remaining ingredients in a blender
Toss dressing with the cabbage salad until well coated
