Vegetable "Fries"

Makes 4 servings

  • 8 cups of any of the following: sweet potatoes, carrots, parsnip, jicama, beets, sliced into thin “sticks”

  • ½ cup melted coconut oil

  • 1 teaspoon sea salt

  • 1 tablespoon mixed seasonings of your choice: cinnamon, nutmeg, smoked paprika, basil, onion powder, garlic powder, turmeric, ginger, curry, etc.

Instructions

  1. Preheat oven to 400 degrees

  2. Place vegetable sticks in a large gallon sized bag

  3. Pour melted (but not hot!) oil over the vegetables

  4. Add salt and desired seasonings

  5. Shake bag until vegetables are well coated

  6. Spread veggie sticks on a baking sheet in a single layer

  7. Bake for 20 to 25 minutes or until slightly crispy
