Makes 4 servings
8 cups of any of the following: sweet potatoes, carrots, parsnip, jicama, beets, sliced into thin “sticks”
½ cup melted coconut oil
1 teaspoon sea salt
1 tablespoon mixed seasonings of your choice: cinnamon, nutmeg, smoked paprika, basil, onion powder, garlic powder, turmeric, ginger, curry, etc.
Instructions
Preheat oven to 400 degrees
Place vegetable sticks in a large gallon sized bag
Pour melted (but not hot!) oil over the vegetables
Add salt and desired seasonings
Shake bag until vegetables are well coated
Spread veggie sticks on a baking sheet in a single layer
Bake for 20 to 25 minutes or until slightly crispy
