Makes 4 servings
2-3 tablespoons coconut oil
5-6 cups green cabbage, shredded
2 large green apples, diced
1 green pepper, sliced
1 handful fresh cilantro, chopped
3/4 cup pumpkin seeds (pepitas)
2 (15.5 ounce) cans no-sugar chili beans, drained, or self-prepared pinto beans
Salt, to taste
Instructions
Heat coconut oil in a large skillet over medium heat
Add all ingredients to the skillet and sauté lightly
Serve warm
